No harm can come from questioning. "Best" case scenerio: You prove it right without relying on the fact that it is widely accepted. Argument strengthened. "Worst" case scenerio: You realize you might have been wrong. The new answer might or might not be what you want to hear, but it beats defending yourself with bullshit.

A lot of Russulas are edible and, in my opinion, very tasty. Where I live various Russulas are highly valued edibles. Identifying them to species is a science of its own though, but one can learn to distinguish edible species from not-so-edible quite easily. In fact, edible Russulas prepared in a certain way are my favourite gourmets :crazy2:

It would be great if you gave out some info on how to prepare them. I've tried numerous Russulas prepared a variety of ways and generally found them unpleasing (I count the edible Lactarius species in with them). The only time I've ever had some that were good was once with some Lactarius deliciosus, a species I've generally found not worth eating.

So give out with the good info. I find Russulas here in quantities enough to fill bushel baskets, even in bad years.

Happy mushrooming!

The recipe I follow is very trivial. I only use small to medium sized mushrooms with convex caps. First I clean them and remove stems, then I place the caps upside down on a pan, add salt, and put them in the oven for about 10 minutes (depending on the temperature; well, until the caps obtain a roasted look and fill up with liquid). Serve as hot snacks right after getting home from the fields/forests. They are like little shot glasses, only you eat them together with their contents :drooling:
