COLINIZATION QUESTION

When i am colinizing my jars, will the following work?

1. Should I put enough water in a casing to go half way up to jars

2. then i place a fish tank heater in the water to keep it at about 85% inside of the bin

3. Should they be kept in total darkness?

One thing that I want to point out.. If your planing on incabating 1/2 pint jars with the aqarium/heater/water TEK you most likely will need to sit the jars on top of something in the tank so that enough water can sit below them and for the verticly mounted heater to work properly. I dont recomend useing an aqarium heater as an air heater. They often will not work properly or even crack the glass of them. You want the heater in a few inches of water with the jars proped up above the water line. Covered, the tank will get steamy very fast at 70 to 85 degrees. Sometime one needs to uncover the tank partially to keep the humidity from "raining" on top of the jars. Be sure and turn the heater off when you fruit with this method.

Thanks for the responce, I truly appreciate it....So no part of the jars should be in the water?... Would it make any difference if im using 1qt. jars? if so, how should i go about doing it?

I'm using ~250ml jars and I've had them sitting on the back of a monitor in this:



It's just a rubbermaid, with H2O/H2O2 in it. The jars are sitting in the water and it's ~83F in there. I've not had a single contam, and the EQ's that were in there are all colonised and ready to roll after a few weeks. (You can see at least two jars in there, maybe three - sitting in the inch of water looking colonised).

I've not noticed any harm coming from having the jars partially submerged like this, and in fact I made a point of doing this to reduce the chance of the cakes getting cooked by the monitor.
