I am almost ready to start this thing, and i had a very newb question about dunking. You dunk when the cake is 100% colonized or as close to that as possible right? Do you have to be REAL careful that the cake doesn't fall apart in the dunk? Or is it quite sturdy once it is mostly colonized? I am just afraid it will bust and crumble apart in the water and or handling? While on the subject, if the cake does crumble some, can you stick it back together and continue the cake method or do you have to case?

to be honest, im a grain guy and never fruited a cake in my life, but what my logic tells me is the following:
the time a pf cake takes to colonise is that fucken long that it simply MUST lose some of its original moisture along the way, so dunking is a good and viable option.
also, i just remembered, i read about people dunking their cakes for about 12 hours, then rolled them in moist verm and fruited them.
i think its even called "DUNK AND ROLL" search the forums for that.
the cakes treated that way fruited the best of all cakes ive seen so far. peace ohm

I have never had a cake fall apart while dunking. What substrate are you using?

If your dunking the normal BRF PF cakes.. you would have to bang it pretty bad to make it fall apart. I have to rip mine apart with two hands when I case them.
If the cake were to crumble.. then forget cakes.. just case it. Which you should do anyways. It is very easy and will be worth the small amount of effort.
Have fun
