This is an old recipe from my mother. It started our as her attempt to make homemade "Chilies Rellenos" after having it at a Mexican Restaurant. She didn't have a recipe so she just made this instead and called it "Egg Mess"
2 cans green chillies chopped 2 cups shredded cheddar cheese 1/2 cup milk 1/2 tsp dry mustard 4 whole eggs 1/2 tsp salt (optional)
Preheat oven to 350 Butter a small square glass baking dish 9x9 Layer the cheese and chilies 1 can of chilies 1 cup of cheese 1 can chilies top off with last cup of cheese
Beat eggs, milk, salt and mustard together and pour over chilies and cheese.
Bake about 35 min.
The first time I made this for my wife she suggested making a bigger batch with some sausage mixed in.
Using a 13x9 pan and doubling all the ingredients and placing a 1/2 pound of sausage between the layers of chilies and cheese is good too.
I have also replaced the top layer of chilies with a can of drained rotel. That is good also.
