Reducing Sterilization Times

By adding salt to the water and thus decreasing the boiling point of the water this should decrease sterilization times by some X amt of time.

Hmmm...Wouldn't salt raise it a few degrees as well..?

And if you'r using Pf cakes, that'd just burn the rice up lol.

saw it on the history channel a while ago that during civil war they upped can production by using adding salt to the autoclave water to reduce sterilization times and increase can production, it was something like 90 mins to 45 or so. which would increase can production by alot, but i guess at only 7 +- a few it doesnt really make too much off a difference , maybe 10 mins tops.

Adding salt (NaCl) to water actually elevates the boiling point, but only slightly (e.g. 0.5 molar NaCl solution is 100.5 degrees C instead of 100.0 degrees C for plain water).

I don't see how this would significantly change the necessary sterilization time if done in a autoclave/pressure cooker. It would be able to get SLIGHTLY hotter with less pressure, but I'd think not much.

Salt water would also increase the rate of corrosion of your vessel.

you get salt deposits on your jars and thats just annoying, after a while its hard to get off
