Impossible to tell for sure, but it looks like the mycelium is fighting bacteria. It might win in the end, though.

Agreed, it looks like bacteria. I usually toss them out.

Sadly it seems so. If it is bacteria though, you can get a peice off your cake to spawn new jars from.
