Colonizing Rye At Room Temperature To Reduce Bacteria Issues?
    #4282559 - 06/11/05 04:15 AM (18 years, 9 months ago)

I have been having some difficulty working with rye, as illustrated in this thread.

The only person who could be bothered to help me recommended incubating my rye jars at room temperature...adding that bacteria don't like temperatures below 80F.

Sounds interesting, but is it necessary? Wouldn't this slow down colonization times...opening a larger window for bacteria to form?

Any help and advice is very much appreciated.

use honey tek, if you inoculate your rye with a honey squirt it will colonize completely in a week at room temp (68-70?F).
or at least, that's what happened to me.
contaminations are much harder to appear if colonization is so fast, but of course you can still have a contam in your honey jar...

Yeah, I inoculated a jar of honey water just a few days ago. Hopefully, it will reduce the occurrence of the bacteria issues I've been having.

keep it in a clean place (ie inside a clean plastic container) and it will work great, but be careful: bacteria also like honey! smell it through the filter before using it.
