If I have some plant material (an extract) dissolved in distilled water, I know it won't keep without refrigeration for long at all. If I add alcohol, will that make it last longer, and if so, how much alcohol do you think I would need for maybe 200mL of water?

Really? I thought less alcohol than water would be alright (when I say alcohol I mean grain alcohol). I would have thought 50 or 60 proof (25-30% alcohol) would do the trick?

it all depends, since you did not specified what kind of plant extract it is, 300ml is a safe bet, which is a tincture at 60%.
if you are going to ingest that you can evaporate the alcohol by heating it ( be careful with open flames)

If we think of some beverages like port wine or vermouth, both are very sweet and sugary. Fungus, bacteria and yeast would absolutely love to munch on it.
But they don't because it has alcohol. And only around 20%. Vermouth may have preservatives but Port doesn't and it keeps for years and years.
Natural fermentation will not go beyond 14%, not because there's no more sugar, but because it ends up killing the yeast.
So to be safe i'd say anything over 30% is safe from fungus/bacteria/yeast attack.
Anything above 50% will probably last years.
70% ethanol is a disinfectant solution.
I don't think you need 60% (2:3 alcohol:etOH). I'd prolly shoot for 30-40%.
But then again, i never done this...
