How do I correct side pinning?
    #4268187 - 06/07/05 04:04 PM (11 years, 6 months ago)

Lemme preface this post by giving a frame of reference.

I had crumbled 3 1/2 pint BRF cakes into a casing with a 50/50+ casing layer. Had it in the fruiting chamber for a while (7 days or so) with 98% RH and temps around 70.

Unfortunately I had to leave for about 8 days. I set my ultrasonic humidifier to run for an hour every twelve hours while I was gone.

When I returned, I had a couple of matured (but small) mushrooms on the side of the casing. I also saw a few pins that are coming up from the side (maybe about 6 or 7).

How can I correct this to get fruit all throughout my casing? Do I need to just wait it out?

it is because your casing is drying out and shrunk away from the sides. you should pluck those out when mature and then fill in the sides with some moist casing and mist the hell out of it. then you should be ok.
the humidifier is your only source for fresh air?
peace

how thick is the casing you applied? did you lightly patch the aggressive spots before you went to fruit?

I didn't patch but most of it was completely even. I also fan as a method of air exchange.

When the mushrooms are picked...lightly fill in with moist, sterile casing mix...contort pan if needed to make it tight. If the casing layer is extremely dried out...you can 'dunk' the casing for a few hours and drain. Punch holes in bottom and tape up when it has drained.

Casings dont ever need to be dunked, but sometimes it can help. I had great results dunking a casing the same as yours (same size pan, same substrate, and medium too) which had flushed and was almost bone dry afterwards (I also couldn't attend to it for a few days so it dried) and it flushed again like crazy after that.

Report back!
