when people say "skin down" does that mean the skin is facing you?? reason im asking is because thats how i cook it and it sounds more like skin up...

The skin is "down", as opposed to "up". Skin-touching-the-grill = down. Next time, soak your salmon in 50% orange juice 50% italian dressing for an hour, then wrap it in alum foil with some lime and oranges wedges touching the meat (not the skin), pour in a bit of the juice, maybe a cup, seal it up, and grill it low and slow.

I like to undercook my salmon...if I trust its freshness.

cook it really hot skin down on a well oiled grill with the
lid down for 15 minutes or so...

it'll be a little tender in the middle...just makes it so moist
and tasty.

Don't use foil, just make sure your grill is clean, hot and lubricated (sound sexy) and once it goes on the grill don't touch it for a good 2 minutes. I like my salmon med-rare. or better yet, slow cooked in a ziploc bag in 140F water for 4 minutes. email me if you want the recipe.
