cutting out uncolonized substrate?

how do you do this? just sterilize a small sharp knife by flaming it, letting it cool, and then using it?

I think that and wiping down the cooled blade with Iso Alco....I am interested in hearing from an expert on this one as well...in the same boat. I honestly am at the point where I was going to just crumble the cakes into a casing, and just remove the uncolonized aspects by hand....all with sterilized gloves inside a ziploc of course.

Yeah I think a wipe down with a lysol wipe or whatever would be fine also if you don't have iso aclohol
