Over - Pasteurized ??
    #4262575 - 06/06/05 03:57 AM (12 years, 11 months ago)

My friend made a casing mixture consisting of 12 cups Spaghnum Peat Moss, 6 cups water, & 2 cups crushed oyster shell. He usually pasteurizes around 150 deg F for 2 hours in oven. He accidentally left his place today with the oven on. When he returned, he discovered the mistake and estimates that the mixture was in the oven for 16 hours and reached 160 deg F. The mixture is still good n moist. He wants to know if this mixture is still okay or if he should toss it and make a new mixture. In other words, did the prolonged pasteurization time kill off the beneficial bacteria? Any helpful insight much appreciated.

Are the beneficial bacteria *that* important when using hpoo?

YES, they really do help fight off contams. Poo casings are alot more hardy than straight Rye or WBS.

"I celebrate the Earth, my home, my mother, my grave, and as long as men are Man they must, if they would preserve the integrated being, do the same---[and preserve]--this rank casual hungry smelly sweaty lusting transitory body, my oozy pulpy liquid-bag-swollen body, bones, blood, hair glands, my bejeweled sex; I love and celebrate it all.  never to let men forget that they are animals as much as gods---that is one thing I shall say."
