Ah what you are actually doing is "overthrowing" the apical dominance!

Quick biology behind it : Plants grow from "eyes" known as shoots as well as meristems.The top one that gives you height is the apical meristem,the other nodes are the lateral meristems. So a plant is perfectly happy growing in height,and from time to time producing side branches from the other meristems.

So what happens in the unfortunate event that a "Not zo preeeeeety" herbivore bites its top of? Well the plant must have a way to put out new growth laterally.

The biochemistry behind it : The apical meristem produces auxins that inhibit lateral branches formations,and that is called apical dominance.By trimming it you actually intervene in its phytohormones.Auxin stops being produced and you suddenly have an overproduction of cytokinins in the other meristems.

One need not cut the apical meristem,one can stil induce branching while also the plant puts height! This can be done by applying keiki paste (or an analog of it) on the lateral meristems. Keiki paste contain cytokinins like the ones produced right now in the plant.If one cannot find keiki paste he can make an analogue of it using some coconut milk in high concentration (even evaporating it to go to a goo state) and mixing with lanolin (i think sheep fat,base of many cremes found at your local pharmacy) to make a meristematic application.
