Homemade Bleu Cheese - The Wedge

1/2 cup mayo
1/4 cup plain yogurt
blue cheese to taste

I've found that the next level is making the sauces and
condiments that you tend to automatially just buy. Things
like spaghetti sauce, mayo, dressings, marinades and
such.

This is an easy one that will make it hard to ever buy
bleu cheese dressing from the store again.

Simply mix yogurt and mayo together well, and add
crumbled blue cheese to desired taste. More mayo if
you like your dressing thick, more yogurt if you'd like
to stretch your mayo out a bit. Careful not to make
it too thin or it starts resembling Sizzler's.

If you'd like to go a step further, break out a mortar and
pestle and grind up some herbs real fine, seasoned to
suite the dish at hand.

I like to put it in a ceramic bowl and chill well before
serving.

For an easy, simple and attractive salad, just quarter
a clean head of iceberg, spoon dressing over top
generously and garnish with bruscetta or toast.

The wedge is served.

I can't stand straight iceberg. Romaine is at least half and half with that, and some in-season greens.
Just my salad prefernce, but sounds like a good dressing.

Im quite a fan of baby spinach and red mustard leaves - they are smashing. maybe a bit of mizuno as well.
personally i think the best dressing is decent olive oil and balsamic syrup - balsaminc vinegar reduced in a pan to create a sweet, sticky tar-like syrup. godly!

and that blue dressing is a corker - if you make it a bit thicker it works well as a dip for crisps and crudites. fantastic munchies food.
