That isn't universal to all humans by any stretch of the imagination, and it could be debated that the love and protection other animals show towards their young or pack is proof of a conscience.

Back when I had a dog, he seemed to know when he did something wrong. How can you be so sure that other animals don't or conscience? Or for that matter, how can you be sure that all humans do?

you don't quite understand what I mean. I'm not saying genetical code does not have a valid place in a definition,it does, but only if you are specific:
a human being is a primate that has these genes different and show us graphically genetic code (or recitate genes)
a definition has to be spectific.
You can't just say, what makes us different are our unique genes, you have to specify them. If you want to use genes in a definition you must say something like: a human is a mammal that has DNA couple #12930287 like that and couple #3129287429487 like that.
If no other animals have it like that, then you have defined a human

How can a dog know whe something he done was wrong? It can only know that what he has done is wrong to his master by sensing it. Last time I checked only humans use the concept of right and wrong, animals just do what they do, and nothing is right or wrong to the, it just is what it is

The dog's sense of right and wrong is conditioned by its upbringing, as is the case for humans as well.
