Need advice on my casings.

Ok, I am a couple months into my casing attempts. Everything is working beyond my expectations. But I have encountered a small dilemma and am unsure of what to do. I apologize in advance for no pictures.

I am getting pinsets that literally cover every square millimeter of my casings. I mean you can't even see the casing material. At this point, however, only roughly 20% of the pins grow to maturity. It looks as if all the pins grew to maturity, they could not possibly fit. This has happened on quite a few trays now. The only way to remove all the pins after flushing is to spend 20+ minutes using my hands, or just use a knife and cut the top 1/2" off my casing, sorta undercutting the pins. I did some research, like always, and came up with 2 alternatives.

#1-Pick mature shrooms, then dunk casing for 6-8 hrs, then stick back in greenhouse as is. When I use this method, roughly 20% of the remaining pins start growing right away, I don't even have to wait between flushes. Quite a few of the pins that don't mature seem to be eaten by the mycelium. I mean it turns white hehe. When shrooms are mature, I repeat and about the same thing happens. The volume of my substrate does shrink noticably each flush, although it does swell back up with dunking.

#2-I pick all mature shrooms. I pick all the pins/aborts that I feel like messing with, sometimes all, sometimes not. Then I dunk 6-8 hrs, drain, put casing mix around the edges of the now smaller substrate and then put a very thin layer of casing material on top, just enough to cover. When I do it this way, it takes 5-7 days usually to pin again, and it is entirely a new pinset. It is roughly equal to the flushes from the other method.

I am liking method 1 because there is a lot less work involved and the results seem similar. I am still working on making 2nd and 3rd flush pinsets as good as the 1st.

Any advice on which method is better? I am averaging about 45grams dry per square foot atm on 1st flushes. But I am using a variety of containers, from 2" to 6" deep. I get over 60grams on the 6"(12qt dish pan). Second flushes are a little less, but the shrooms are way bigger, but less of them. Third flush drops again, and shrooms get bigger again lol.

And is there anything I can do to help more of the initial pinset to actually mature on the first flush? Sorry if I rambled on, its been a few weeks since I visited the site hehe, been very busy hobbying.

If you cut off my head, what would I say? Me and my head, or me and my body?
