condensation

i've got 3 jars almost fully colonized. but they dont' look particularly healthy.. There is condensation on the sides of the jars and it everythign just looks a little damp. How can i fix this? i was thinking of loosening the lids to let some of the water out.. will this work? thanks for any help.

The PF Tek reads that a high water ratio can lead to condensation and perhaps puddles forming in the jars. It is suggested that lid bands are loosed to increas air exchange and help smooth out the water levels. How far are your cakes colonized? I loosed my lid bands after good signs of growth, maby 5-10%. The speed of coloziation speed up greatly and growth turned from small and whispey to thick, rizomorphic (sp?) growth.
