smelly casing *second round*
    #4240223 - 05/31/05 03:54 PM (12 years, 29 days ago)

hi all
this is the third day after i crumbled my cakes into the casing.
for the top layer i used:
80% vermiculite
10% perlite
10% oats

anyway, i just checked if any mysc..(however it called) has shown up.. and it is, a little bit..
the problme is that it kinda stink
not too hard
but i can sense a mouldy smell coming out of it

is it normal?
could it be the wet oats?

thanks

how thick is your casing layer?
How did you go about sterilizing it? (did you pressure cook it or microwave?

A bad smell coming off of it is not normal and generally means that you have a contaminant.

depends upon what the bad smell is.

Sounds like Trich. Look out for any green. Trich stinks.

the casing layer is 1 inch
aswell as the crumbled cakes

for sterilize i put it in a pan, covered with aluminium foil and into the oven for 1.5 hours at 150 C'.

sour?.. hmmm well, you can say that.. im not sure but ill wait to see how its develops.
in case of contaminant... is there anything i can do to save the cakes?
ill shoot myself in the head if ill lose it.

cant see any green thought.

i can upload some picturs if it will help you recognize the problme
is it ok to open it for 10 min to take pics?

thanks

Yeh..taking a picture of it wont hurt it.

For the future: make your casing layer less thick (1/4-1/2 is optimal).

If they do in fact get contaminated you can cut off the part which you believe to be contaminated.

Where did you get that idea? You need to learn the basics before you try to case a tray. Any uncolonized grain in the casing soil is very likely to contaminate.

It sounds to me like your screwed. Dont put nutrients in the casing layer. The layer is too thick. What medium did you use for your cakes. Where are those pics?

well here are the pictures.. tell me the true doc!

and what do you mean by "medium"??

in case it is contaminated, can i take out the casing layer out and put on a new one?
also as you see the casing layer is more like 1/2 - 3/4 "

thanks

if your casing layer contaminated taking it out and replacing it wont do any good because bacterial spreads so fast as does trich which is what i find usually smells on my gourmets. you probably should start another set of cakes just in case. Look out for anything green black or any color other than white. If it just smells like MOLD its probably nothing because the first ports i ever grew out smelled to me but they were the real deal. If it smells like socks its bacterial and ther eis no hope for saving bacterial because you cant massively does your casing with anti biotics.

describe the smell one more time socks or like mushrooms/mold

looks like some cobweb on the first pic, but the second looks good to this point. if that is your casing layer they should already be fruiting. you put it to fruit as soon as you can see the myc just under the surface of the casing. if you have aggressive spots then you lightly patch them and then fruit. get to it.
peace

yeah it is called cobweb mold. spray it with some h2o2 and hope for the best. if i were you i would lightly patch the heavy myc areas and fruit them bad boys. how long have they been like this?

h2o2 is hydrogen peroxide. use a 3% solution.
patching is using some of your casing material and lightly covering the aggressive areas of myc, to allow the rest to catch up. this will help give you a more even pinset.
