How colonized should a cake be that is going to have a casing?

Im going to be making casings and this is my first time growing mushrooms. I know there is colonization and then primordia formation if you leave it a bit longer but if Im going to be breaking the cake up, is there any sense in letting primordia form only to destroy them when the cakes are broken up. Also, Im using a 20 gallon long tank. 12"x30" About how many cakes will I need? Thanks

let the jars get to 100% white, but theres no need to let primordia form. as far as how many jars to use, i'll let one of the more experienced folks answer that

Do as many cakes as you can.  If you haven't already bought your jars, go with quarts for a container that size.  You'll be breaking it up anyway, so there's no reason you have to be able to get it out in a whole cake.  Aim for at least 3-4 inches of substrate when cased.  Also make sure you completely light-proof the sides of your tank, or side pinning will occur, and it'll piss you off... i concur. as soon as the jar is 100% colonized, case 'em. i even did a 1-cake casing in the bottom 1/3 of a Kahlua bottle. fruited just about as fast as the cake by itself, and thicker fruits too.
