I once made some jars of grain using brown rice. I added cold water to the jars and let them stand with the intention of sterilizing them the next day but I didn't get back to pc them until two weeks later. The grain had sprouted and the jars were a tangled mess of roots and leaves and smelled really sour so I made a new batch of jars with fresh grain. Just for kicks I sterilized both batches and inoculated them with agar slices. The sprouted jars were too solid to shake and I let them colonize without shaking. I also let the jars with fresh grain colonize unshaken. Colonization is slow if you do not shake the jars but shaking can also spread contams that might otherwise not be a problem. The sprouted jars colonized faster and the growth was much better than the jars with fresh grain and there were no contams in the sprouted grain.

Although this has allready been deleted, i just wanted to add:
For making Mbaku (something along the lines of african moonshine), you sprout the corn before you mash it.. might be simmilar in this case.. it changes the nutrients available though.. as most of the sugars have begun to be used for sprouting..
