need help with WBS

im following docs WBS tek. it says to simmer it for 20-30 mins, i simmered for 25 and all the seeds had exploded. how long are you supposed to simmer for to keep this from happening?

also, i read the other WBS and they dont even mention simmering, is this step even necessary?

i dont simmer, i just soak for 8-12 hours

Not necessary, no. Heat some water on your stove so it's almost boiling, toss in your grains, keep it just below a roaring boil for about 20 minutes, remove from the stove, let it soak for 3 hours, drain and rinse, then use. PM me if ya want more detail.

your saying to boil it instead of soak it? ill try it with a little seed and see how it turns out.

anymore advice would be appreciated.

If you put your WBS in warm water and let it soak for four hours (or more), it'll be OK. The warm water speeds the process simply because it's hotter. A soak from 4 - 48 hours works, any mroe than that is overkill. Eventually, as with most other moisture-type questions, you'll just know what to look for and know what works. When you know the conditions you are looking for you can get each batch perfect.

Simmer,do not let the water come to a boil.When about 5% of the grains have exploded,it is done simmering.

The purpose of the simmer is get each grain fully hydrated.
Try 20 minutes-if that fails try 15 min.The times for these teks are adjustable.
The pre-soak's purpose is to germinate any bad endospores so that you can kill them by pc'ing.

Soak the birdseed overnight to germinate bacterial spores.

Rinse it in the collander a few times to help rinse away they treat and nastiness.

Simmer it for 10 minutes, turn the heat off and let it sit in the hot water for 30 more mins. (this solves your exploding kernel problem)

Drain it for 45 mins.

Pressure cook at 15 psi for one hour, do not pc birdseed for an hour and 20 minutes like allot of people say, it burns the seed and dries it up.

thanks. i tried doing agars just-soak suggestion but the seeds expanded like 5% at most, so i got the water jar sitting in a warm water bath. if that doesnt expand em then ill throw em in some simmering water for a few minutes.

i dont PC for more than an hour, i usually only do it for 30 minutes with half pints but since im working with quarts now i figured an hour would be sufficient.

Yeah, if you do the 12-24 hours soak, an hour is plenty. You can get away with cooking bigger grain like rye or popcorn for an hour and twenty minutes, but birdseed is small and will burn and dry up.

the idea is to have your grain be nice and shiny, with minimal excess water when you take it out of the pc.
