Found some chicken of the woods (Laetiporus sulphureus) today and just wondered if anyone has a favourite way of preparing them.

Pickled. We cut off the tips from the main peace. dice them and pickle them in vinegar with some vegetables and herbs. So tasty. Or i would use them as a meat substetute in dishes. Like in a spageti sauce. I never tried to pan fry them.

There is a tree that produces 60 plus pounds of this mushroom. Its one beutiful fungi.

Thanks Sheik, I'll try pickling some. I'm gonna try making a creamy risotto with them, should be tasty!  :laugh:
