Niteowl's spaghetti sauce, a pictorial 1

I love to cook. Chinese and Italian are my 2 favorite ethnic foods to cook. I have been making a spaghetti sauce for almost 20 years. I have never used a recipe....just made it by "feel". It has "evolved" into what I'm going to post today.
This sauce takes 4+ hours to make and only costs $30-40
!!!and makes a TON you will end up freezing some!!!!
1 bottle of red wine 1-3tbsp olive oil 1 med onion 1 med bell pepper 1-3 tbsp diced garlic 3 cans (15oz) plain stewed tomato's 2 small can (6oz) tomato paste 1 lg can diced tomatoes 1 can (20-24oz??) spaghetti sauce 1lb gr beef or sausage Sm-med box of (non-active)mushrooms  Italian seasoning oregano basil salt
here's my ingredients

Start by chopping up the onion and bell pepper

Heat up some olive oil and garlic over a medium heat until the garlic just begins to sizzle. Then add the onion and bell pepper

simmer 20 min, stirring every ~5min

add the stewed tomatoes

Add basil and simmer ~ a half hour, again stirring every ~5min (this is very important, it will scorch if you don't keep it stirred up)

after ~ 30 min simmer

add to big pot

fry beef, and set aside for later

add diced tomatoes, Italian seasoning, oregano, 1 can of tomato paste and enough wine to thin the sauce down enough to simmer ~ an hour

After about an hour the sauce will still be a bit chunky

I like mine less chunky so I put a blender to it

add beef and simmer another ~ hour

After an hour it is time for a taste test

Add any spices you feel is needed Chop up mushrooms and add them to the sauce, add water if your sauce has thickened up, and simmer another ~ hour or until mushrooms are as tender as you want.
 Once it is close to being done, if the sauce is still thin, add the other can of tomato paste. {if you want to stretch it even farther, add the can of spaghetti sauce now}
Heat up oven for your favorite garlic bread. Boil water, salt and some olive oil to make the pasta, add bread to oven

Come and git it

Time to eat

This is the one I use, I use it for everything that needs tomato sauce.
Olive Oil 2 15oz. cans of whole tomatoes couple cloves of garlic finely minced 1 medium onion, 1/4 inch dice 1 shredded carrot 3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
Soften the onions in some olive oil, then add the garlic, carrots, and thyme. Cook for a few minutes. Hand crush the whole tomatoes and dump the entire contents into the pot. Simmer for 30 minutes. I usually omit salt, because I don't know what I'll need the sauce for, and if it is with pasta, I cook the pasta in salted water, and use some of the pasta water in the sauce when I dress it.

I like to use fresh tomatos when my mothers graden has them......I don't like store bought tomatos

if you're using canned tomato products, add a very small pinch of sugar to get rid of the metalic, acidic taste

well after the hurricanes, it was hard to find good tomatoes. not to mention most of the tomatoes that you get in the supermarket have been artificially ripened, so they're bland anyways. I just bought a couple cans of san marzano tomatoes. I hope they're good.

It only needs a very tiny amount, if you use too much it's gross.

I swear, sometimes I get really disgusted with beef. I love homemade spaghetti and meatballs but I got tired of the beef. I tried Italian sausage, it was ok but just not what I was looking for. Then I made my meatballs exactly the same as usual except I substituted ground chicken for beef and bang that did it. I think I will only use ground chicken from now on. You guys should try it, you might like it too. It's milder and tastier too.

Nice ratio of tomatoes:to other stuff there
Mine has more onions in it, but that's because onions are the best vegetable ever second only to potatoes.

Might wanna add some wine in the beginning, when heating the tomatoes. Tomatoes have certian flavor compounds that only break down with alcohol.
My family has always used pork neck bones to flavor it as well, not ground beef.

Anything that's strong, dark (purple even) and really, really tannic. Good wine is wasted in cooking, but strong wine works really well. I don't often have it, which is a shame, as it always tastes much better with a quarter bottle in (or more, depends on how much you're making)

i'll try this but i'll add a few real tomatos and that osso bucco meat i think its veal shank and pork mince
do you have to add any water or wine as it cooks down? i use beef or french onion soup stock if it does

cool when i cook spaghetti or anything really i always i lose my appetite and thats why i dont like cooking but its always better the next day
even though i dont like cooking i do out of boredom sometimes
i also need chilli sauce in mine now too

Look at any recipe as a guide
Add stuff you think would taste good I like to make it with polish sausage sometimes

exactly
sometimes i 'bastardize' recipes so much that the food either sits in the fridge untouched by anyone and then the dog gets it or the plates,bowls and cooking utensils are practically licked clean
its like hit or miss for me with lots of misses
