Casing Question

Is sterilizing your casing absolutely necessary? Most of the casing teks say to sterilize your casing, but the next step is let cool. After cooling wouldnt the sterilization be obsolete?

Is there something I am not getting?

some say sterilize some say pasturize. some even say to microwave it.
depends on the casing material you are going to use.

If you sterilize your casing in a pressure cooker, or even steam sterilize it in the jars w/ lid, you wouldn't have that problem. Also, if you sterilized in microwave w/ microwave safe container and a lid on top.. same thing.

I make up a batch, get the moisture right, stuff it in an autoclave bag & nuke it, several times 2 minutes each. Works fine for me.

casing should be sterilized, as it could harbour contaminants. Happens all the time.
