Fermentation? Please elaborate..

I have read where some mushrooms need compost or substrate that has been fermented (i.e., agaricus blazei). I am not really sure I understand what this process accomplishes (as opposed to aerobic decomposition for secondary decomposers). I imagine it has to do with decomposition in an anerobic environment, but why? Thanks for any insight!

I'm not sure about this.....I did some poo up...my last batch of 15 casings, 4 of them were a bit wet and got to hot and got a vinegar/sweet smell to them. They stopped colonizing (horse poo for substrate BTW), especially in the middle (the hottest part of the substrate) and I was told they had fermented, specifically heterolactic acid fermentation. I dont know if this is the same as your talking about, but they smelled like a fermented watermelon that was sitting in my trunk on a very hot couple days. The compost should be decomposed by certain things I think, but I dont know if fermented is the right word. I dont know to much on the subject, but thought I'd add that..

fermentation for the most part is the same as decomposition meaning an organic compound in this case glucose or a carbohydrate is broken into simpler compounds for energy the byproducts of which can be large amounts of ethanol and CO2 this process is usually done anerobic(in the presence of little or no O2) as oppossed to aerobic(oxygen present and needed)the mushroom must require certain compounds that are a metabolic byproduct of fermentation
