Transferring PF cakes to horse manure

Someone directed me to a post about transferring PF cakes to horse dung awhile back, but I lost the link, and I can't find anything via Search. If some helpful soul would provide a link, or perhaps just outline the procedure, I would be indebted.
I have the concept down, and I could probably wing it, but I'd rather start out with solid information. For example, when does one apply a casing layer? How small should the chunks of mycelium transferred to the dung be? You're supposed to poke a few holes (w/a fork) into the tinfoil to help aeration, right? Etc...

Apply the casing layer when its 98-100% colonized. I'd wait till its 100%.
I think it was Roadkill that suggested using a cheese grater to grind up cakes into small pieces. Pretty small.
Yea poke a few holes in the foil so it can breath a little. I poke 5-6 toothpick holes in it.

Try this one. This tek, by Roadkill, will pretty much answer all of your questions. Next time save yourself the waiting for a reply and do a search.

Cheese grater works WONDERS!!!!! Just stand it up in a big mixing bowl and go to town!!
