What Is the Point of "Double-End Casing" a Cake?

Maybe I am missing something but if I am dunking and rolling, is there a reason to "double-end case" a cake that should now be covered in verm, which will soon be sprayed with water? Is there something special about the top and bottom of a cake?

nah soem double end case some cover the whole cake. covering the whole cake is better imho. better water retention that way

Moisture,moisture,moisture. Shrooms are 90%-92% water. The more water they can get, the more shrooms you will get. DEC is just an additional way of giving moisture to your cakes. They can really never get enough.

I see, I guess you can only get so much to stick on the sides. How thick should this mini-casing layer of verm be on the top and bottom?

I use about 3/4" on the bottom and 1/4" on top. I had trouble getting the verm. to stay on the sides so I do both. Good Luck.
