If you get straight agar it has no nutrients added, the agar used for growing mushroom cultures has added nutrition to it. Agar is just a jellying agent to hold the water and nutrients in. As to the best of my knowledge.

Here's the scoop:
Agar is a polysaccharide derived from a marine alge, species Agar agar. It is used as a gelling agent because few microorganisms have the necessary enzymes necessary to break down the polysaccharide, which would turn it to a liquid mush and wouldn't be very useful for culturing isolates, observing characteristics or much else.
Basically, agar is non-nutritious and can have nutrients dispersed throughout the matrix, giving the microorganisms mechanical support to grow on.
This is why gelatin or pectin are rarely used for microbiology, because many microorganisms can digest these substances.
In some instances however, a microorganism may be able to digest agar, and a diferent media wil have to be used.
EDIT: Agar also has a different melting and solidifying temperatures which make it useful for high temperature incubation, where gelatin or pectin would be turned to liquid.

glove box or flow hood. Without you greatly increase your chances of contams. You can build a workable one with a plastic tub and a clear trashbag, or even a cardboard box and a clear trashbag. It's not as good, but it'll get you by at the very start.

I haven't seen the videos, but i would assume he did it outside andy glove box or flow hood so it would be visible for the camera.
