Some grain questions

I'm new to grains, and experimenting with rye my 1st try (magash). i was wondering how you treated jars after pc'ing? do you open the pc lid once the pressure drops to 5psi? where do you allow them to cool? do you prefer simmering for 30, or closer to 45 minutes? and most importantly, how much rye should I buy if I want to make 48 quart jars (over 3 weeks). i think that simmering for 45minutes is a bit to long jars seemed a little wet next time afoaf said he will try 30 well you need one cup per qt so 48 cups of rye

You open your pressure cooker after it has released the pressure.  Usually I like to wait until it is no longer letting out steam (obviously) and a few minutes after to let is slightly cool.  Simmer until you start to notice that some of the rye has started to burst from water absorption.  I just weighed my rye and it was 194.4 grams/cup.  1cup/qt jar = 7.8912 Kg/17.3969 lbs.  I buy my rye for .69/lb which would cost me $12.00 in case you wonder about cost.  See if you can find a feed store and you might be able to get like a 40-50lb bag for less than 10 bux... yeah feed stores its like .20 cents per lb even if you dont buy 56lbs
