How long do Jars last?

How long do half-pint jars last after they have been steralized? I boiled them for a good hour, what little condensation there was on the inside of the jars was gone the next morning. If the ramesy (sp?) seal held during this process, how long are they good for?

At least a few weeks if there sterile and fairly air tight. In a fridge perhaps a month or more. It's a good idea NOT to inoculate right after the jars cool off. Wait at least three full days and inspect for mold and shit. This helps one isolate any containamation source (helps ya figure if a vendor is ripping you with moldy syringes/prints)

Wait 3 Days, sorry, I disagree. Next day is fine as long as you know what you're doing. And as far as storage of sterilized jars, I woudn't innoculate them after a week. That's just my opinion, though I'm not a scientist, I know that the rice/flour will not stay sterile for an extended period. Mold will grow. If some here have inoc'd after a week, it was the strength of the strain that overwhelmed any potential competition.The idea of this whole endeavor is timing! Why sterilize weeks or months before? Shoot me for asking!  :wink:

If you truly sterilized the jars, then mold will not grow. I missed a jar when inoculating once. I left it and didn't inoculate untillt the next time I made a new batch. It was left for about a month and worked fine, without re-sterilization.
