 Small trays or large trays?

On a multi-level shelf that is 2x5, unfortuneatly, it's a 2 foot wide closet that's 5 feet deep.
Would a number of smaller trays or one large tray per shelf have a greater advantage, and why?
Also, how deep should the small or large tray be for bulk substrate & casing?

im thinkin a good substrate depth for bulk substrate is 3 inches. a larger pan would be ebtter because it would have a greater depth and in turn produce larger fruits
