pre-made PF Cakes...will they keep
    #4121391 - 05/02/05 01:06 AM (13 years, 26 days ago)

I only have one presure cooker that can only P 8 1/2 pint jars at a time. I just wanted to know if I could 1) make them up to 3 days in advance and then P cook them with good results and 2) how long after being presure cooked will they keep.

you can wait up to 3 days before cooking them, dont go longer, green mold will be there soon.
As long they are sealed you can safely wait up to a month to knock them up, even longer

Will keeping the un-p cooked cakes in the fridge extend their shelf life any before they are cooked?

yes maybe a week, keep them sealed to hold the moisture in

I highly advise against this, no offense tahoe. It's just I've experimented with that a bit and 100% of the time I had cobweb within 24 hours.

cob web likes higher temps so once you make them put them in the fridge prior to PC and it'll help slow germination/growth.

I pc'd my jars, let them cool, and stored them in an airtight container at room temp for about 2 and a half weeks. I had no contamination in any of the four. Should be fine as long as you keep the foil on the top. I guess ideally though you want to inoculate them asap to cut down the risk of contamination.

That's my experience anyway,
