why poke holes before PC?

Seems like it would be a lot easier (esp with quarter pints) to poke the holes after you pressure cook using a sterilized punch/nail.

Can anyone clear this up for me please? can you wait to holepunch the lids until after pressure cooking?

Quarter pints? As in ~125mL? That's a bit small isn't it? Anyhow, you poke the holes first so that the pressure inside the jar can be released so it doesn't explode. Either that or don't screw the lid on tightly. If you have a two-part lid turn the inside upside down so that it doesn't seal.

ok new q, same topic, is there any way to boil all of them at once, with some completely submerged, without getting the insides of the jars soaked?

If you're pressure cooking you only need a tiny bit of water at the bottom. If you don't have a rack lay down some thick paper napkins at the bottom of the PC, and place however many jars you can in on the base level. Then, using a measuring cup or something, pour some water carefully inside - enough so that it comes maybe a little less than halfway up the sides of the jars. That should be fine. P/C for around 20 minutes @ 15psi for 1/2 pint PF jars.

I had a great idea for my PC. I took some metal screen (Like chickenwire but the wire was in a box shape. It comes in a roll at Home Depot near the lumber section) and cut it with plain scissors into a small box shape (approx 7x7in). I cut the edges of the box towards the middle an inch or two and bent in the sides. Then I cut another box about the same size and cut the sides the same way.. then bent them all the way in... to make a flat surface to put on top of the 'legged' screen. This ensures none of my jars get any water boiling up to the tops.

This is not true. The jars will not explode if they are sealed. many people use PC for canning, and you dont poke holes in jars of food that you are canning.

the reason you poke the holes first is to keep them from sealing. if they seal and then you poke a hole in the lid air will be sucked into the jar, along with any contams in the air.

The whole point of PC'ing is to have water temperatures reach higher than boiling inside the jars without it converting to steam, thereby killing the contaminates. It's the same way a pressurized nuclear reactor works. water can reach about 650 degrees F without boiling. Your jars won't explode.

Ok, time to get this thread back on track...with another question.

I have a PC that is 6 quarts. It has a pop up pressure indicator, but I do not know how many PSI it will get up to.

This is the PC. How am I sure that it is at 15 psi, if it will even go up to that much? Do I just crank the heat up all the way until the pressure indicator pops up and assume that it is at 15? Is there ususally a gauge on most PC's?

Also don't have a rack. So just put some paper napkins underneath the jars? this is all it needs? what will this help after they are drenched in water?

Re the napkins, yes just lay a few down - the idea is to stop the glass from being in direct contact with the metal. You could use one of those thick kitchen wipes or a tea towel or something instead. Just keep in mind that if it is coloured the colours will probably run - if you don't care about that it's not going to affect what's inside your jars anyway.

I'm not 100% on how to use your cooker, so maybe someone else should have a go. You could probably just heat it until it starts hissing at you then ease back on the heat. You don't want it to hiss loudly but a gentle hiss will probably mark that you are at the correct pressure. (again I'm not totally sure about this)

1. Pressure cookers do not go much above atmoshpheric pressure. 1.02 atm or so. If you throw water on the pressure cooker while its hissing, or the valve rocking, the water should immediatly be vaporized to steam. If the water takes more than a second or so to evaporate then you are not achieving a high enough temperature.

2. The holes are not necessary in the top of the jars as said above, but for same reason as stated above are a good idea.

3. A nuclear reactor's water at 650 is under a great deal of pressure. probably somwhere above 20 atm, possibly well above.

do you have the weight that goes in the middle of the lid? if so, yes it is 15 psi. if you dont have the weight, it is useless.
