My first flush is finished and I just dunked 12 cakes....They were in my fridge for about 15 hours. I just put them out to fruit, and i noticed some bluish, greenish goo in some spots. At first I was sure they contaminated, but now im not so sure. It looks like every spot is a piece of some fruit that either grew after I dunked it, or I failed to remove before dunking. Is it possible that leftover mushroom fruit could have just become turgid and also the bluing showed through?
It could be bruising from the treatment. After the cake has dried to where it's back to 'normal', try the rub test: a cotton swab or small piece of tissue lightly rubbed over the questionable area. Mold will come off as a blue smudge, bruising will not.
