Should I dunk cakes that will be cased?

I want to dunk my cakes, but if I put them in the fridge (I'm told this is necessary to keep bacteria from colonizing the cakes) won't that cold-shock them and start the fruiting cycle when I want them to colonize the casing layer? I have kept jars sitting in water in my incubator for 24 hours before, but I just learned that this promotes bacterial competition in the jars, so what do you guys think?

ya dunk them they always grow a few days after you start to fruit them or coldshock them.

I just dunk my grains (rye) for a few hours max, while I'm pasteurizing the casing mix, etc. They'll have the time to get more water from the casing before pinning. Worked fine for me.

But I'm still sort of a noob, so don't take this too seriously...

Just dunk. Its not going to hurt and might possibly help, so go for it. I dunk in the jar and place in the fridge. Has worked well so far!

i dunked for 4 hrs and then cased them and then cold shocked in the fridge for 7 hrs and had awesome results... its all personal preference on what you wanna try out and see what works.

note: the coldshock was note directly after casing... I let it sit for three-five days covered in dark incubation mode then cold shocked it when it was ready.
