Cutting into cake

Ok...

In previous crops I have had a problem with removing the mushrooms from the cake. I find that there is often a small amount of mushroom matter left on the cake, which will then become infected eventually.

But, it is very difficult to remove this matter without disrupting the outside layer of mycellium on the cake.

Is it ok to cut this matter off with an exacto knife by actually cutting into the cake?

That's what I had to do this morning in order to get it all off. Now I am concerned that I have exposed my cake to contaminents, yet I know if I would have left that matter on the cake, it would have eventually become contaminated anyway.

And what does this mean for dunking my cake? Can it be dunked with a small piece cut off of it like that?

Just Snip it off at the Base and you well be fine..

I usualy twist and pull the stem neat the base, I seldom have a problem with a
little being left behind, in the even that I do leave a little I simply pick it
off with my fingernails...

funky, snipping it off is fine for outdoor cult, indoors it's better to remove it
all so there isnt any material that can start to rot.

But if I snip at the base there is still mushroom remnant left on the cake, and I SWEAR it always gets nasty & infected.

I picked it off with my nails first, and then I was concerned my nails were contaminated, so I cut a little more off with the exacto knife. (I'm paranoid about contams...)
