Update and QUESTION please share experiences

I had my cakes in fruiting for a week and when they didnt do anything i cold shock dunk and rolled them that was threee days ago there is now a good amount of fuzzy white mylecium growing and sum knots of it with like pin size brown dots on top of the knots. The still havent pinned its now day ten almost eleven how long should i expect to wait my temp is 75 and humdiity is good plus i have a air pump so there no lack of oxygen. How much longer should i expect to wait you think. Please help and also is the nearly microscopic brown dot on the top of some of the mylecium knots or bumps a pin starting? Thanks for anyhelp HAPPY FOUR TWENTY
