Cold Shock Dunking Question?help
    #4069198 - 04/18/05 05:53 PM (13 years, 11 days ago)

I decided to cold shock and dunk the rest of my jars bc they havent pinned and it was day 8 and it seemed like a good tek. So anyways the cakes i had in jars in the fridge for twenty four hours when pulled out had almost slug shapped white and light gray looking fungus growing is this a sign of something good or bad?

Also how long after dunk and shock does pinning usually take with perty good conditions on average?

After a cold shock, it wouldn't be unusual to see pinning in between 1-7 days. However, the grey substance you describe could be a contaminant. How large are the "slug shaped" growths? How lightly coloured a grey? Could they be rhizomorphs (thick, ropey strands of mycelium)? Perhaps some pictures, or a more detailed description, would allow other with greater knowledge than myself to suggest something.

That slug shaped growth would have been a viable shroom had it grown outside the jar.
I've seen it myself after leaving cakes to soak for 48 hrs+. (I forgot) It's only slug shaped because it's squashed against the side of the jar.

Be prepared to wait at least 10 days for pinning.
