substrate wetness

I am having the hardest time figuring out if my substrate it too wet or too dry. My first batch turned out way too wet. It was like slime. My second batch looked fine so I inoculated them only to find that after a week the myc growth came to a halt only a quarter of the way colonized. I'm assuming that the substrate has dried out.

Now, I made a new batch which I actually was excited about because it seemed almost perfect. I grabbed a handfull of the sub and squeezed it. A tiny bit of water started to seep between my fingers after holding it tight and after I let go it basically crumbled apart again after a bit of stirring.

So, I PCd the jars, let them cool, took them out and noticed that there are tiny drops of moisture about half the size of a needle head on the inside of the jars. Also, it looks like there are smudges against the jar which look like tacky BRF. Is this normal?

I was going to post a pic but you would not be unable to see what I am talking about.

Need some input. Are they too wet?

Well, if my jars were swimming would you still give the same advice?

This far really is nothing in relation to the entire process. So, I would rather start our right than find out further down the road that I was handicapped from the beginning.

Plus I only have one syringe left. Already wasted one due to this same issue.

actually i think if anything my jars are a tiny bit too wet, but they all colonize fast...this pic is of a jar i knocked up on the third, and its pretty average compared to the other jars. (kamoi thai super strain, iirc)
