Burying infected casings/cakes

If these spent-infected casings/cakes finally produce a few shrooms, how do i know they are not growing out of any green parts of the substrate since its in the ground?

Is this supposed to be a little bit risky or what?

No, not risky at all. Shrooms will not grow out of molded parts, it destroys pins before they have a chance to do anything.
