when sterlizing in a pot

whats like the most fundemental thing when it comes to sterilizing jars in a pot?????? That NO water or anything gets in the jars?? in other words, keep completley airtight, yes?
and when it comes to incubating in TIT do the jars still have to maintain airtight or a littl loose, how exactley??? thanx

Not air tight. You want gas to be able to escape, but you dont want particles to enter. Does this answer the question?

not airtight when sterilizing...how will the steam penetrate the ssubstrate and sterilize it? the lids should be a little loose with some foil over them to help keeping water from splashing in.

In the TiT you want your jars tight minus the foil.

so your saying put fry layer of verm on top, than some foil and finally a loose lid??? is this how it goes?? maybe leaving out the lid part and put just some good 2-3 layers of foil??

2-3 layers of foil would work, but if you have the lid, use that too. BUT . . . it should be a dry layer of verm, followed by lid, followed by a layer or two of foil.

different strokes for different folks.

I prefer dry verm, lid, foil instead of having the foil on the inside. It is easier for me to just take the foil off so they can breath better in my TiT.

You can do it either way, what ever works for you.

Dobinky.. I wondered if you are thinking that the steam circulating inside the pot is supposed to enter the jars. If you`re not, please regard this message. If you are, that`s not correct. The jars inside the pot should be covered sufficiently to NOT allow either steam nor water to enter BUT allow the build up of any pressure to escape. The water that is already in your substrate heats up and steams the contents, so to speak. Evidence of this is seeing droplets of condensation INSIDE the jars after you have boiled them for an hour then taken them out and placed on a bench to cool.
The general recommended techique is to cover the jar lids with foil to stop water entering the nail holes in the lid. I found that this isn`t entirely fail-proof.. especially if you have the stove turned up too high and water starts to splash all over the place, up the inside of the foil, and into the nail holes. Keep the water at a light/slow boil to avoid this but going one step better, firmly press a square of electricians` tape on all of the nail holes before putting in the pot. You can even tape the the rim of the lid where it meets the glass of the jar to be sure. A lid that isn`t screwed on tight enough or simply doesn`t screw on properly can leave gaps where water will enter. Put a layer of foil over the lids too just to be sure.
You really DO NOT want any water getting into the jars during the boiling process. The water content in the substrate is already right. Too soggy a substrate as a result of water entering during boiling will not allow mycelium growth through the cake.

and.. if you use my recommendation for using tape on the nail holes and rim to prevent water entering during boiling, when it comes to innoculating just peel back the tape on each hole to stick the needle through then replace the tape. No need for any foil of course when you put your jars into the incubator.
There is some conflict of ideas regarding gas exchange of the jars in the incubator. Having the nail holes covered won`t prevent the spores germinating in the first stage then continuing to exhibit mycelium growth. There is enough air in the jars already to allow this. Once mycelium growth is evident, you can uncover the nail holes completely to allow sufficient gas exchange. Or, just keep them covered until mycelium growth slows or comes to a halt. Make sure there is also air getting in and out of the incubator itself.
