What is the mold used in gorgonzola and other blue cheeses?

What is it & Is it the same mold in all blue cheese varieties?

Penecillium spp. Same genus that makes penecillin.

so would eating gorgonzola and others actually be healthy b/c of the mushroom inside?

Penecillin is found in varying amounts in several species in the genus.
They decided on P. chrysogenum because it is higher yielding than the original P. notatum that Fleming worked with. Not much penecillin is cultured these days, its synthesized.
The "story" of penecillin is a pretty interesting human drama. Read The Fifth Kingdom and Magical Mushrooms, Mischevious Molds. The latter makes Fleming out to be a pretty self-interested asshole only interested in credit for the antibiotic.

i hate to be a nitpicker but, IINM, penecillium is not a fruitbody producing mold/fungi. IINM, only fungi producing the characteristic fruitbody is termed a mushroom. I know, I know, "picky picky"....

Actually it is still cultured on big scale. I had a job once at the world largest penicillin V producer, Biochemie in Austria, and they had huge fermenters where they fermented various broths to produce penicillin among other things.

I see I misunderstood the passage in Fifth Kingdom that I was reading.

Natural penicillins are still made, but are supplemented and replaced by other synthetic -cillins.  I've never been prescribed it before, I always get amoxicillin.  Never specifically asked for it though. 

Can you just imagine me and the doctors office with a cold.... "Come on doc not that fake shit gimme the real stuff."  :lol:

the Penicillium in blue cheese is - Penicillium roqueforti
