So many good old kung-fu movies.
"Master of the Flying Guilotine" aka "The one armed boxer 2," now this may be the greatest movie ever made. I cannot express in words how great this movie is.
"The one armed boxer" Very very good although not quite as amazing as the sequel.
"The Five Deadly Venoms" There are a bunch of old movies that center around the deadly venom clan. All of them are really good.
"One armed swordsman" also pretty good
"Sui woo juen" very good, you would need the original uncut version
"five fingers of death" good
Many more good ones.

Aww man.. A Game of Death is indispensable.
Apparently, Game of Death 2 has some scenes with Bruce Lee in it, but then they kill him off so they could finish the movie after he died.

anything from Yuen Woo-ping, especially Iron Monkey (Siunin Wong Fei-hung tsi titmalau). stay away from the new Miramax version that Tarantino butchered. get the original HK release or even the UK dubbed version (both can be found cheaply on eBay). he has been so prolific in direction, acting, writing, and probably most notably action/fight choreography (Kill Bill, Matrix movies, Fist of Legend, Once Upon a Time in China (directed by Tsui Hark also very well worth checking out further). fyi, Yuen Woo-ping directed Drunken Master (Jui Kuen) with Jackie Chan if that makes ya wanna dig further. I think one of his most overlooked films is The Buddhist Fist (Fo Zhang luo han quan) from 1980. lots of laugh out loud comedy with some of the most amazing kung fu fighting sequences ever.
also, for essential kung fu and basically Hong Kong/Asian cinema as a whole you must check out the work of the Shaw Brothers. some of it is dated in retrospect given the technology at the time, but they (collectively) were responsible for a ton of classics including but definitely not limited to (all on DVD) 1978's Shaolin Master Killer (aka 36th Chamber of Shaolin) (Shao Lin san shi liu fang), which is arguably the best kung fu film ever. this is also where the hip hop group Wu Tang Clan got their inspiration. Master Killer starred Liu Chia Hu (Gordon Liu) who was/is incredible (you should recognize him as Johnny Mo in Kill Bill 1 but definitely as Pai Mei in Kill Bill 2). any Shaw Brothers work of his is worth checking out.
another Shaw Brothers classic is Five Deadly Venoms (Wu Du) also from 1978 starring the Venoms crew who were an amazing team of actors around that time. I'll stop there re: the Shaw Brothers. lots of stuff worth checking out that shows the history of kung fu and HK cinema. (edit: just saw this mentioned above. nice call, original poster.)
lastly for someone currently doing a lot of great stuff, Stephen Chow. he released Gong Fu (aka Kung Fu Hustle) last year, which is playing in some U.S. theatres (see it if it comes near you). I have yet to see this but am a huge fan of his (mostly due to God of Cookery and Shaolin Soccer...two hilariously amazing films). check him out.

so, yeah, basically 1978 was the best year for kung fu cinema imo.

Watch the special on Bruce Lee if you ever get a chance. They did a 2 hour thing on History Channel a while back.
Amazing how much he really tapped into the truth of physics, and pushed the limits. He understood and talked a great deal about the principle of water - to be like the water. Water is soft, you can jump into a pool from the roof. Water is hard, it can carve a mountain. Water takes the shape of whatever it is in. Become a cup, or become the bowl. Flow with your enemy...
His running kick was said to feel and look like a blow from a volkswagon bug. You see him fly in from the side of the screen, nail a guy being held by others, and all the guys go flying back. Hilarious.
Just another example of what the mind can accomplish when it conquers the common limits of the daily man...
