To Simmer or not to Simmer

I looked at my WBS jars today and noticed that WBS didn't look hardly any bigger than the dry WBS in a new bag i have. I soaked the WBS for 18 hours, so i don't see why it wouldn't have absorbed water. Next time should i try to maybe soak 18-24 hours, then simmer for 10 min or so? My jars are taking a really long time to colonize also. I think it's because they are too dry.

Does simmering the WBS smell up your kitchen for a long time? I know PC'ing the WBS gives off an odor, so i figure simmering would just as much or worse.

simmer for 30 mins on low heat, rinse and drain, let still for 15 mins covered, load into jars =) Just becuareful u dont cook the seed (too much heat)

are you saying to simmer for 30 in addition to the 20 hour soak, or to just simmer for 30 and not soak at all?

I've found it makes a huge difference in the amount of water grains will absorb during the soak whether you begin the soak with hot or cold water. If you'll begin with hot tap water, the grains will absorb twice as much during the soak. I like to stir a bit of gypsum into the water so it gets absorbed at the same time.

Do either. Find what works best for you. I suggest a 12 hour soak for WBS, followed by a 20 minute simmer.

Yup. I soak and simmer. But WBS is the only thing I know how to cook. So I enjoy it.
