Jar water content if F'ing with my patience

im having problems with my cakes becoming too wet or dry while their incubating.

i cook some organic brown rice in 1.5X as much water, then throw it directly into the jars while its still steaming, then throw a level layer of dry verm on top. i pressure cook on the highest setting for 15 mins. the jars by this point have tape over the holes ( bandage tape that is kinda filterish ) and foil that covers the lid.

after innoc'ing, i sit the jars inside a container filled part way with water and a fish tank heater in it. remember that by this point the tape has been punctured and the only thing seperating the cake from the outside air is the foil.

Can anyone help me figure out why some jars are getting really soggy on the bottom (so that when i turn the jar upside down the rice falls apart in a gooey mush ), some jars have half the cake dry out, some have a soggy bottom and a dry top and only a few jars actually work?

their has to be some way to keep uniform moisture in all the cakes during incubation. Ive considered not putting the jars in a water bath for incubation, but i honestly dont see how moisture can get up through the foil which is pressed tightly down against the lid. or even how only half a cake would colonize because the other half dried out in such a water bath.

does a pressure cooker have a tendency to dry the cakes out or add more moisture?

is their a way to set up a incubation chamber using a fish tank heater to regulate temperature without actually having the jars sit in contaminated water? is their any way to regulate temperature with out using water?

why are you boiling the rice? are you doing it this way to use as spawn or for casing?

you should try grinding the rice into a flour and mixing that with water and verm, like the PF tek is supposed to be done.

well, i used to have alot of problems with cakes drying out because BRF /verm mixture doesnt retain moisture evenly. i mean, the verm is only for structure, so i decided that brown rice would be best because it retains its own form, moisture, and is pure food, with no verm to impede the mycellial growth. ive been using brown rice for the cake.

is their something wrong with using just brown rice? what im doing is actually from the 9er Tek .

Do a search for a TiT (tub-in-tub) incubator...Basically you're halfway there you just need another rubbermaid to float in the water being heated by the aquarium heater. That way you have a nice dry chamber that is kept at a constant temp.

Also you want to make sure that your final layer of foil isnt totally sealing off the jars from air exchange...that would definitely aggravate an excessive moisture content.

final layer? how many layers of foil should i have? i only ever put one on.

follow this tek http://www.fungifun.org/pf/pf_en.htm if you really wanna use Brown rice.
or read th abridge version here. this should answer you tin foil question though

1.) dont use your canning jar top.
2.) wrap a layer of tin foil tight over for use as a lidpunctre in for place for inoculation(or however many you want.
3.) put another lay over it not to tight though so you can have air exchange.
4.) Pressure cook and cool. Once cool inoculate spray some lysol towards the roof in you bathroom if you dont have a glove box. so two layers.

Sorry i think i may have misread your post. Do you cover the jars with anything after u noc em up, or do u just rely on the bandage tape to keep out contams? When you were talking about moisture getting "up through the foil which is pressed tightly down against the lid" it sounded like you must have put another layer over the top after u noc'd them up, because otherwise the moisture is simply going out the hole you created with the needle.

If you aren't totally sealing off your jars then your moisture problem is simply from incorrect water content when u mix your substrate. Unless maybe the water from your incubator is somehow condensing inside the foil and dripping into your jars...which i guess is possible

Build a Tub in Tub
Make sure you have gas exchange
Check your substrate recipe

And about your jar lids...A FOAF likes to

1) Put a 4"x4" square of Tyvek directly on the mouth of the jar
2) Drill a 1/4" hole into the center of the lid
3) Fill said hole with polyfill
4) Cover with foil, PC
5) inoculate, cover with coffee filter and rubberband

This may sound like overkill to some, but everyone has their own preferences. Just make sure you have gas exchange while keeping out contams :smile:
