What happens if you pack your jars too tight? Will anything grow? Or will there not be enough oxygen?

It's not good to do. Mycelial growth will quite nearly halt. Or at least go really slow. A lot of directions reccomend packing the substrate a little. I would advise against packing it down at all if you want your cake to colonize like a nice cake. If you pack your substrate it might NEVER totally colonize. Yes, that's first hand experience talking.

i dont think there is anything you can do if you already sterilized them..you may try loosening it up a bit with the needle when you innoculate..but you dont really want to disturb your dry verm layer too much if you have one

If you haven't innoculated yet it wouldn't be much trouble to redo them. If you've already inoculated I would just let it be and colonize unless you have an extra spore syringe handy to redo it all. It would just colonize really really slow. If you have another set of jars you're doing I wouldn't pack them at all and you'll see a huge difference.
