Yet another Casing-Related Inquery

Ok, so my friend had this jar that got pretty water logged in the jar so he decided to try out casing for the first time. So he took this cake, cut it up into chunks.. Put it in a small round tupperware container with vericulite on the bototm and 50/50 on top. Now mycelium is starting to form some white fluffy pufts on top of the casing. When is the appropriate time to drop the temperature to get the best yeild?

Drop the temp now to ~76F for a week or so... and keep the humidity high!
Prolly won't need major cold shock treatment (fridge) if they're cubies.
