Help My Jars Are Stalled

I inoculated 4 qt. jars of WBS 11 or 12 days ago. After about 5 days they started to show myc. growth. Then they grew for about 2-3 more days. For the last 3-4 days there has been little to no growth, and i was just wondering why this could be. They are being kept at a constant 72-75. I know it's a little cool, but i thought they would still continue to grow at least a little each day. I was under the impression that at these temps. it would take 3-5 weeks to get them fully colonized. At the rate they are going it looks like its going to take much longer. They are only about 5% or less done.

So if i dont incubate at 80-85 they are done for, and wont grow anymore? Everyone told me before that i could colonize them just fine at 70-75, but it would just take about 3-4 weeks, max of 5.

No, they aren't "done for", but it helps A LOT to keep them incubated.

is it possible for my jars to start myc. growth, then just stop and never start back up again? I figured once they started that i was fine, and they would colonize eventually, but now im a little skeptical. Maybe im just being impatient. It has only been like 11 days.

Give it a little more time. I think it is possible for them to grow to a certain point and stop, but if you got them to germinate, and the conditions didn't change, I don't know why they aren't growing.

I soaked the WBS for 18 hours then drained for 40 min. Then i PC'd them for 75min. I didn't think they were dry but maybe. I didn't simmer at all, but didn't really think it was needed if i soaked the WBS.
If they were too dry, then will they not grow anymore?

I've got a jar of Brown rice, whole grain, that has almost completely stalled. I believe that it is whole because I didn't simmer...The soaking only does so much for the moisture content. Try to incubate, and if that doesn't do anything, try to use the colonized portion to spawn more that you simmer this time.
