quick casing question

ok here's the deal. i have 6 cakes that were placed in the friuting chamber about 10 days ago. they are showing very little signs of growth, just a few knots here and there. i have decided to case them, so do i need to wait for their first flush or can i crumble and case them after they are this far along.

Did you dunk them initially? If you're going to case them, just case 'em whole. Waiting for the substrate to recover from crumbling this late in the game will just delay things further. Casing whole works wonders.

so i can just lay 3 cakes down on their sides and cover with a casing layer. instead of crumbling

yes you can cover air tight but you want to give it a couple of air exchanges every day
