so i boiled my jars on the stove... now i'm waiting to knock em. should it be good after an hour?

Wait until they are completely cool. Best to wait overnight.

i would wait for at leaste 8 hours if not more...room temp...

I think personally, it is best to inoculate after about 2 1/2 hours or so, or untill the jars are fairly warm to the touch. This make it so that more of the moisture is in its gaseous state, wich is very beneficial when the spores first enter the jar and go their own way out to colonize. good to have alittle warmth so they lil' bitties arent first introduced to coldness, but instead, a warm welcome. You must understand the fungus. hmmmm?

2 years, 6 months, 3 weeks, 1 day, 13 hours, 4 minutes & 23 seconds (joke).
So long as they are cooled to ambiant room temp, you are good to go.
Remember, the internal content may be warmer than the exterior feels.

no, do not put anything in the fridge. Don't open the pressure cooker until it cools, and don't put the whole pressure cooker in the fridge because a sudden temperature change will crack your jars.

I had no cracked jars from this. Canning jars are pretty robust. I was wondering if there are any other inherent problems aside from the glass cracking. -s3x3s
